Mexican & Cheese?

I made this yesterday for dinner. Combining two of my many favourite dishes, Mexican and Mac & Cheese. I know some might gag! but it's truly honestly delicious. Super simple to whip up and you get a dinner in 20 minutes.


Serves about 2-3 hungry tummies
Ingredients:

200-300gm macaroni ( I used fusili)
200-300gm boneles chicken strip
1 Onion - diced
1/2 green pepper
1/2 red pepper
1/2 yellow pepper
1/2 cup sweetcorn
1/2 tbsp cumin
1/2 tsp cayenne pepper or any amount to your liking
1/2 tsp paprika
1 tsp oregano
salt and pepper to taste

1 tbsp butter
1 tbsp flour
2 cups of milk
1 cup of cheddar/parmesan/any cheese you like
1 tbsp mascarpone or you could use any cream cheese ( I know absurd kan? but I like it) hahaha

Method:

1. Boil the pasta al dente, drain and set aside.
2. Heat a saucepan and fry the onions with olive oil until soft then stir in the chicken until cook.
3. Add the cumin, paprika, cayenne pepper, salt pepper and oregano then the peppers and corn. stir fried until slightly soft then add the pasta into it. Set aside
4. In another saucepan, with medium heat make a roux from the flour and butter, pour in the milk and stir until thicken (will take about 6-8 minutes), add the cheese.
5. In a baking pan, add the pasta mix then the cheese sauce and fold evenly. Sprinkle some more cheese on top if you like
6. Bake in the oven for 20minutes at 190 degrees or until the cheese are brown


p/s: To my sister Sarah, I know you don't like the Mexican Chicken Dish, I'm gonna make them into these whenever you are here. =)
